January Update and Blogoversary Giveaway Details

I have not been as frequent with my blog posts as I usually like to be. January has been a slower month after the hustle and bustle of the holidays. Here is a brief recap of our first month of 2010:

Jeremy began his 4th and final semester of nursing school! Yay! He will graduate in May and be on to bigger and better things - namely getting a paycheck for a year before we jump into graduate school. We have started researching masters programs and it looks like we will be leaving Lubbock for 2-3 years. Possible places: In Texas - Fort Worth or Houston, Utah, Florida...who knows!

I have really embraced the blogging world. You may have noticed my ever growing list of "Inspiration Blogs" to the left of this blog post. I have been so inspired to decorate (one of my many loves) on the cheap, but chic, by so many talented ladies in blogland. Melissa at 320 Sycamore is one of my favorites. I have spent hours pouring over her blog and loving every minute of it! Melissa and her family used to live here in Lubbock and my mom knew her and introduced me to her blog (though I have not been personally introduced to her :( ). She inspired Jeremy and me to makeover our bathroom. Here are some pics of the bathroom before we started the makeover:

This is a redo of a redo. My in-laws redid this bathroom a couple of years ago but it did not turn out quite like they had planned. Not much contrast in color huh? Can you say blah? And that flat paint...gross.

Not the greatest lighting for these pictures, sorry. I didn't think to take pictures until right before we started painting and that was in the evening with not a lot of natural light to work with.

Also this month, we took the plunge and bought a membership to the Science Spectrum (a science museum in Lubbock with a special room for little kids to enjoy). Spencer has been loving it! Any place that has a room full of fun toys, a giant cow, and a giant dinosaur that roars loudly at you is a little boy's favorite.

I celebrated my 26th birthday this month! Somehow birthdays just don't have the same excitement that they used to...

After days of 60 degree weather, winter weather is back in Lubbock! I have not left the house in 2 days due to extremely icy roads and snow. Spencer and I have stayed in our pajamas for 2 days straight! Here is a peak out our front door:

And as for Spencer, every little boy needs to dine with all his stuffed animals every once in awhile! Lunch today consisted of sharing chicken nuggets and apples with Elmo, the Cat in the Hat, Big Bird, and other assorted animals.



Lunch was also interrupted several times when Spencer had to put Elmo in timeout... when I asked why Elmo was in timeout Spencer said. "Elmo hit me!" I guess you can see what principle we are working on at home...
Spencer continues to be such a joy (and sometimes a challenge!) and makes life interesting everyday. He is very inquisitive and asks MANY questions all day - "What's this?" "Mom, what happened?" "Mom, can I have...?" He continually surprises us at the things he says.
So that is our January, however uneventful it may be! And as for the giveaway in celebration of my 2 year blogoversary... I have finally decided what I would like to give away! Oh yay! I am always up for more yummy recipes! So.. my favorite recipe lately has been for sweet and sour chicken. Here it is:

4-6 boneless, skinless chicken breasts cut into chunks (Or boneless, skinless chicken tenders)
a lot of cornstarch ( I didn't have Cornstarch, so I used Flour and they still turned out great!)
Enough oil to cover the bottom of a frying pan.

Preheat the oven to 325. Heat the oil in the pan on medium high heat, then what you do is you crack the egg into a shallow bowl and beat it. Add a little salt and pepper to it. Dredge the chicken in the egg and then coat the chicken with corn starch. Throw the chicken into the frying pan. Brown both sides of the chicken. Put the chicken in a baking dish.

Then mix:
3/4 c sugar
1/2 c vinegar
4 T ketchup or catsup, whatever you prefer.
1 T soy sauce
1/2 t garlic powder
Whisk it together then pour it over the chicken.

Cook it for 45 min. stirring to coat the chicken with the sauce every 15 minutes. I'll be honest, your house will smell like vinegar for the first half hour, but then, like magic, it will turn into a sweet, pleasant aroma that will have the neighbors beating down your door.

nicole-- i can't wait to see your new bathroom AND... i would LOVE a copy of your cookbook. wait, seriously, my favorite recipe...

love the new bathroom and i would love a new cookbook, especially a good one that would actually get some use! my favorite recipe is crockpot chicken tacos. dump in the crockpot: 3 chicken breasts, one package taco seasoning, can of black beans, can of rotel and simmer for several hours. one hour before serving, shred chicken and add can of drained corn. serve with cheese, sour cream etc on soft tacos. easy and yum!
